BETH'S RICE PUDDING

1/2 cup uncooked rice
1 cup water
1/2 cup sugar
1 tblsp cornstarch
dash of salt
2 eggs separted
2 1/2 cups of milk
1 tbsp lemon juice
1/2 raisins
1/4 cup sugar

stir together rice and water
heat to boiling stirring occassionally]
reduce heat cover and simmer 14 minutes
All water should be absorbed
Heat over to 350
 

Blend 1/2 cup sugar, cornstarch and salt.
Beat yolks slightly.
Add yolks and milk to mixture...beat...
stir in rice...lemon juice and raisins.  Pour into dish
Place dish in pan of hot water.
Bake about 1 1/2 hours stirring occassionally or until pudding is creamy
and most of liquid is absorbed

Remove from oven....not water....
heat over to 400....
Beat whites until foamy, beat in sugar.  Spread on pudding... Bake 8 to 10 minutes
